Pepper Crusted London Broil

Ingredients

1 (1-pound) piece of London Broil

1 cup dry red wine

3 cloves garlic, mashed

1 tablespoon tellicherry peppercorns

2 tablespoons Lawry's lemon pepper

2 teaspoons freeze-dried green peppercorns

2 teaspoons allspice berries

2 teaspoons cubebs

1 teaspoon melegueta pepper

Directions

  1. Wipe the London Broil with a damp paper towel and pat it dry. Place the meat in a dish and cover it with a marinade prepared from the red wine and the garlic, and allow it to sit for 2 hours. Preheat the broiler. Place the remaining ingredients in a spice mill and process until they are coarse powder. Remove the London broil from the marinade, sprinkle it with the powder on all sides until it is well coated, place it in a broiler-proof pan and cook for 5 to 7 minutes on each side, or until it is medium rare. Slice diagonally and serve.

I've been cooking for 35 years, have 50 cookbooks, Bon Appetit subscriber for 20 years, been watching food network since before Grillin & Chillin w Bobby & Jack and never heard of 3-4 of those ingrediates. Never heard of Jessica Harris and understand why. At least she could describe those obscure peppers etc. and tell us where to find them or what to substitute.
