Ingredients
4 cups blackberries
1/4 cup granulated sugar
Juice and zest of 1 lime
5 tablespoons coconut rum
2 cups (1 pint) heavy cream
1/4 cup powdered sugar
1/2 cup toasted coconut
6 sprigs fresh mint
Directions
- Add the blackberries to a bowl, then sprinkle over the granulated sugar, lime juice and coconut rum. Stir, then let steep for about 10 minutes.
- Meanwhile, add the cream, powdered sugar and lime zest to the bowl of a mixer and whip to soft peaks, 1 to 2 minutes. Mash the blackberries with a fork. Add the berries and liquid to the cream and gently fold in, creating a swirling pattern.
- Spoon the whip into six individual glasses and top with the toasted coconut and sprigs of mint.
