Pulled Cuban Chicken Wraps And Cheese Fries With Turkey Bacon

Ingredients

4 to 6 slices turkey bacon, cooked until crisp and crumbled

Reserved roasted potato wedges

1 cup shredded cheddar cheese

1 tablespoon olive oil

1 cup sliced red onions

4 reserved roasted chicken breast halves

1 cup prepared salsa

1/3 cup prepared ranch dip

4 (8-inch) spinach tortillas

Directions

  1. Preheat oven to 375 degrees F.
  2. Arrange potatoes on a large, foil-lined baking sheet. Top with cheese and bacon pieces. Bake 8 to 10 minutes, until cheese melts. Using two forks, pull chicken apart into shreds. Set aside.
  3. Heat oil in a large skillet over medium heat. Add onions and saute 3 minutes, until soft. Add chicken and salsa and bring to a simmer. Remove from heat and stir in ranch dip.
  4. Arrange tortillas on a flat surface. Top with chicken mixture and roll up. Serve with cheese fries on the side.

Especially to any who saw the show, didn't write down what Robin was doing, and then went to the site and the directions there weren't quite the same: I did the same but wrote down quickly while viewing on TV. For the cheese fries, she peeled and cut them into wedges (8 slices/potato, sprayed the baking sheet, then the potatoes, then sprinkled them with salt and pepper. Robin then put them in the oven (sorry, I didn't catch the temp until the potatoes were cooked, removed them, sprinkled with cheese, added the turkey bacon on top, and returned them to the oven at 400 degrees for 8-10 minutes.
