Quick Fix Avocado Salad

Ingredients

2 ripe avocados

1 lime, juiced

1/3 cup fresh cilantro leaves

Directions

  1. Cut avocados in half and remove pit. Peel flesh away and slice avocado into wedges. Arrange slices on a serving plate. Squeeze lime juice over avocado slices and then top with torn cilantro leaves.

We really loved this salad. It was incredibly easy and two of our favorite ingredients are avocados and cilantro. I added some diced tomatoes to this to add some color and extra flavor. Next time I may add a small amount of diced red onion too. This makes sucha great side for so many of the mexican dishes I like to make, that I will definitely make it again.
