Romaine, Feta, Grape Salad

Ingredients

1/2 head romaine lettuce, cleaned and chopped

20 seedless grapes, halved

10 (1-inch) cubes feta cheese

1/2 fresh lemon, juiced

Sea salt

Freshly ground black pepper

2 tablespoons olive oil

Directions

  1. Toss all the ingredients in a bowl and mix well.

Chicagoland Chef du Jour

I thought this was really great. I used what I had on hand (green grapes, crumbled feta and it turned out great. I think red grapes would give this more eye appeal. I love the pop of the sweet grapes with the salty feta. The dressing is spot on. This is a keeper!
