Moist Zucchini Bran Muffins

Ingredients

1 (18.25-ounce) box raisin bran muffin mix (recommended: Sun-Maid)

2 egg whites

1 1/4 cups grated zucchini (about 1 medium zucchini)

1/4 cup unsweetened applesauce

3/4 cup apple juice

1 teaspoon ground cinnamon

1 cup raisins

Directions

  1. Preheat oven to 400 degrees F. Lightly spray muffin cups with canola cooking spray; set aside.
  2. Combine all ingredients in a mixing bowl. Stir to combine thoroughly.
  3. Spoon batter into prepared muffin cups, filling each 2/3 full.
  4. Bake for 20 to 22 minutes or until tops are golden brown.
