We tested the viral TikTok method of baking store-bought cinnamon rolls in heavy cream with a buttery brown sugar topping—and it really is worth the hype. In a side-by-side comparison with rolls baked straight from the package, the cream-baked version rose taller, baked more evenly and stayed far softer. The cream at the bottom of the pan bubbles and steams as it heats, infusing the rolls with moisture and richness. At the same time, its fats and sugars caramelize into a syrupy layer that clings to the base of each roll. Paired with the brown sugar–butter mixture spooned over before baking, the result is an ooey-gooey cinnamon roll that leans into sticky bun territory. We also fine-tuned the viral recipe: the original glaze calls for twice as much brown sugar as butter, which we found overly sweet when combined with the packaged icing. Our even ratio of butter to brown sugar, plus a pinch of salt, hits the perfect balance.
