Soft and Moist Meatloaf

Ingredients

3 cups soft white bread cubes

1 large egg

2/3 cup milk

1 tablespoon mustard

1 1/2 teaspoons salt

1/4 teaspoon freshly ground black pepper

1/2 teaspoon dried basil leaves, crumbled

1/4 teaspoon dried thyme leaves, crumbles

1 onion, chopped

1/2 cup chopped celery, including leaves

1/4 cup chopped fresh parsley leaves

2 pounds ground beef

Directions

  1. Pre-heat oven to 350 degrees. Place bread cubes in a large bowl. Beat egg and milk together in a small bowl, then pour over bread cubes. Let stand until bread absorbs milk, about 15 minutes. Mash and stir mixture until bread is in very small chunks. Add mustard, salt, pepper, basil, thyme, onion, celery and parsley. Mix well. Add ground beef and mix well. Turn mixture into an 8 x 5-inch loaf pan. Place in oven and bake for 55 minutes. Let stand 5 minutes before slicing.;

I was looking for an easy meatloaf recipe and I found it!!!! This was super easy and it turned out moist just as I hoped for. I substituted some of the spices such as the Thyme. I have fresh lemon thyme growing and I used dried rosemary instead. I also omitted the celery. It still turned out fantastic. I will be making this again.
