Strawberry Cucumber Mojito

Ingredients

2 limes

3/4 cup (135 grams) chopped strawberries

1/2 cup (90 grams) peeled and chopped cucumber

1 small handful fresh mint

3 tablespoons sugar

1 cup (250 milliliters) white rum

2 to 3 cups (500 to 750 milliliters) soda water

Directions

  1. Cut each lime into eight wedges. Set four wedges aside for serving and add the remaining wedges to a large glass measuring cup or small pitcher along with the strawberries, cucumber, mint and sugar. Using a cocktail muddler or the end of a wooden spoon, mash and muddle everything together until jammy and fragrant and the sugar has mostly dissolved into the mixture. Add the rum and stir until well combined and the sugar has dissolved.
  2. Half fill four highball glasses with ice and pour over the rum mixture. Top with soda water and garnish with the reserved lime wedges.

So refreshing! Full disclosure, yes I muddled but then I used my emulsion blender. I wanted the cucumber to break down a little more. If you like pulp, you will love it It’s really good!
