Sunny’s Easy Apple Pie Lassi

Ingredients

1/2 cup raw cashews

2 cups sweetened vanilla almond milk

2 apples, preferably 1 Granny Smith and 1 Honeycrisp, cored and cut into chunks 

1/4 cup honey 

1/4 cup lemon juice 

1/2 teaspoon apple pie spice, plus additional for garnish 

Directions

  1. Put the cashews and 1 cup of the milk in a bowl and let soak for 8 hours and up to overnight in the refrigerator.
  2. In a blender, add the apples, honey, lemon juice, apple pie spice, soaked cashews with their soaking milk and remaining 1 cup milk. Blend until very smooth. Refrigerate or pour over ice. Dust the top with a sprinkle of apple pie spice and serve.
