Put the cashews and 1 cup of the milk in a bowl and let soak for 8 hours and up to overnight in the refrigerator.
In a blender, add the apples, honey, lemon juice, apple pie spice, soaked cashews with their soaking milk and remaining 1 cup milk. Blend until very smooth. Refrigerate or pour over ice. Dust the top with a sprinkle of apple pie spice and serve.
