Townline BBQ Sauce

Ingredients

1/4 pound butter

3/4 cup minced onion

1/2 cup minced garlic

2 lemons, zested

5 tablespoons freshly squeezed lemon juice

4 1/4 cups ketchup

1 cup tomato juice

3/4 cup light brown sugar

6 tablespoons molasses

1/2 cup Worcestershire sauce

1/2 cup chili powder

4 tablespoons white wine vinegar

1 1/2 tablespoons chipotle puree

Pinch kosher salt

Directions

  1. Melt the butter in a large heavy-bottomed pot or Dutch oven over medium heat. Add the onion and cook for 5 minutes. Add the garlic and cook for an additional 5 minutes. Stir in the lemon zest, lemon juice, ketchup, tomato juice, brown sugar, molasses, Worcestershire sauce, chili powder, vinegar, chipotle puree, salt and 3 cups water and bring to a boil. Lower the heat and simmer for 30 minutes, stirring frequently.

 I started to cook mine without adding the water. Mostly because I actually forgot to add it! Ha! But, I did add apple juice and then put it in the food processor to smooth it out after cooking at 4:30 to 40 minutes. I like sweet sauce so in addition to everything else I did add some honey.
