Ingredients

5 to 6 Roma tomatoes, diced

8 to 10 scallions, whites and light green parts, chopped 

1/2 jalapeno pepper, seeds removed, finely chopped 

1 to 2 cloves garlic, finely chopped almost to a paste 

1 cup loosely packed cilantro, chopped 

Juice of 1 to 2 limes

2 teaspoons red wine vinegar 

1/2 teaspoon kosher salt 

1/2 teaspoon ground white pepper 

Directions

  1. Combine the tomatoes, scallions, jalapeno, garlic, cilantro, lime juice and vinegar in a medium serving bowl. Add the salt and pepper. Stir to combine. Let sit at room temperature for 10 minutes, then stir again.

I made this salsa using a variety of tomatoes fresh from my garden (2 cups vs. 4-5 romas) and fresh cilantro and it was great! I also seeded the tomatoes and put them in the food processor and pulsed them 5-6 times. Amazing! Hint for the chef when no one is looking: The liquid was wonderful and refressing by itself.
