Marinated Cucumber Salad

Ingredients

1/2 cup plus 2 tablespoons unseasoned rice vinegar

2 tablespoons soy sauce 

4 teaspoons sugar 

4 teaspoons sesame oil 

2 English cucumbers, thinly sliced on a mandoline

Directions

  1. Combine the vinegar, soy sauce, sugar, oil and 1 tablespoon water in a medium bowl and whisk to combine. Add the cucumbers, cover, and let marinate in the refrigerator for at least 1 hour. Serve chilled.

Love almost everything VB makes (out of all of the following “chefs” on FN). Made her blackened catfish (with Cod and jalapeño slaw tonight. 5+). Maybe my daughter added too much sesame oil - but she repeated it back to me per the recipe. Way too much sesame oil for our taste. We tossed the leftovers. Sorry VB! But you are still the bomb!
