White Bean Dip

Ingredients

One 15-ounce can white beans or cannellini beans, drained and rinsed

3 tablespoons olive oil, plus more for garnish 

2 teaspoons red wine vinegar 

1/4 teaspoon garlic powder 

Kosher salt and freshly ground black pepper

1/2 teaspoon red pepper flakes 

Pita chips, for serving 

Directions

  1. Combine the beans, olive oil, vinegar, garlic powder, some salt and pepper and 2 tablespoons cold water in a food processor and blend until smooth. Transfer to a serving bowl, garnish with a drizzle of olive oil and sprinkle with the crushed red pepper. Serve with pita chips.

This is so simple yet so fantastic! I was craving some hummus but with having to stay-at-home right now due to Covid-19, it was impossible to run out and get some. Plus, I had no garbanzo beans in my pantry. But I did have cannellini beans and all the rest of the ingredients which are pantry staples. I made the recipe as written and so glad I did! The red pepper flakes gave it just the right amount of heat and the red wine vinegar was the perfect amount of acid. My new favorite dip for everything...veggies, crackers, chips or just a spoon!
