The dinerlike establishments known as cha chaan teng are central to the Hong Kong identity, as they are neither Chinese nor British. Menu mainstays at these spots include macaroni in soup topped with processed ham and Hong Kong-style milk tea (a strong Ceylon tea with evaporated milk). One sweet snack not to be missed at Kam Wah is the pineapple bun, a soft roll that derives its name from its crackled, sugary top.
