On the more notorious side is, of course, Rocky Mountain Oysters. Forewarning: These are not your average saltwater mollusks. They’re actually calf testicles, which are considered a delicacy out West. If you’re a rookie, Winchester Steak House in Buffalo, a fine-dining spot that’s been around since 1999, is a solid choice to experience them. Many say Rocky Mountain Oysters taste like chicken, but you can be the judge of that.
