If you’ve been anywhere on the Internet this year, chances are you’ve seen Alison Roman’s Salted Butter Chocolate Chunk Shortbread at least once. Her buttery-salty-chocolatey slice-and-bake cookies swept Instagram by storm last winter after the release of her cookbook, Dining In.
In fact, her shortbread became so popular that they’re simply referred to as "The Cookies." Seriously. They are THE cookies! An Instagram search of #thecookies will turn up countless replicas of Alison’s famous recipe.
Sure, that was then and this is now. But believe it or not, Alison’s cookies are still as popular as ever. She recently stopped by The Kitchen, where she shared her recipe with us. In the short time since, her shortbread has racked up multiple 5-star reviews on FoodNetwork.com, with one reviewer saying the cookies were "the best ever."
And that’s not all. Just last week, The Atlantic ran a piece about "The Cookies" and how baking to relieve stress topped cooking trends this year (sounds like a good plan to us). And the New York Times also included the shortbread in their most popular recipes of 2018, nbd.
Need we go on? It’s pretty safe to say that Alison’s Salted Butter Chocolate Chunk Shortbread is absolutely still a thing. Do yourself a favor and make a batch ASAP.
