Asparagus with Mustard Vinaigrette

Mustard Vinaigrette is just a classic! It works on anything from salads to green veggies to grilled fish or chicken. This vinny can be made ahead in larger batches so you can store it in the fridge and just use as needed. This dish can be served warm or at room temp! It will make an asparagus lover out of anyone!

  1. Blanch the asparagus for 3 minutes in boiling salted water. Shock in an ice bath and remove to a sheet pan.
  2. Heat a medium skillet over medium heat with olive oil to coat the pan. Add the shallot and a pinch of salt and sweat until translucent, about 3 minutes.
  3. Make the vinaigrette by whisking together the mustard, lemon zest and juice, olive oil and salt to taste. Add the asparagus and toss to combine for a minute or 2. Turn off the heat and drizzle with the vinaigrette.
