Mixed Salad with Mustard Vinaigrette

3 teaspoons red wine vinegar

1 teaspoon Dijon mustard

1/2 cup salad oil

Salt and black pepper

2 heads romaine lettuce

2 tomatoes

1 red onion


  1. In a bowl, whisk together the vinegar, mustard, oil, salt and pepper and set aside.
  2. Chop the romaine lettuce and place in a large bowl. Cut the tomatoes into wedges and the red onion into thin slices and add to the bowl. Just before serving, toss the salad with the mustard vinaigrette.
