Ingredients

  • Extra-virgin olive oil
  • 4 (12 to 14-ounce) strip steaks
  • Kosher salt

Directions

Preheat the grill to high. Brush the grill with a wire grill brush to remove any soot and fat on the grill grates. Wipe the grill grate with an oiled cloth to remove any bits of crud that were loosened by brushing.

Remove the steaks from the refrigerator and let them come to room temperature. Season the steaks generously with salt and let sit for at least 15 minutes.

Arrange the steaks on the hottest part of the grill until beautiful brown grill marks form, then rotate the steaks 90 degrees to create the crosshatch marks.

Turn the steaks over and repeat the process. Once the grill marks have formed on the second side, move the steaks to a cooler part of the grill and let cook to the desired doneness. Cook about 5 to 6 minutes on each side for medium-rare.

    I had a couple of great strip steaks and wasn't sure how to grill them. The problem was they came out medium, not medium rare. The confusion is that I think you must add the marking time to the overall cooking time. Making good grill marks takes about 4 min, so I think next time I'll subtract that from the 5-6 minutes cooking time suggested for medium rare, thus only 4 minutes per side (or less after marking. Other than that, the steaks were very good, not dry. I also added pepper and finely minced garlic on both sides of the steak for great flavor.

    Some people will dismiss recipes like this because there are only a couple ingredients shown and they seem pretty self explanatory but the genius of Anne Burrell is in the very unique way she presents the steps needed to bring one from start to finish. Its rare to find a 'teaching' chef like herself who can actually present recipes to the novice cook and guide them through the process to success. The only other person who comes to mind is Julia Child who was able to similarly demystify cooking. That being said, WE'RE ALL WAITING FOR YOUR COOKBOOK LADY!

    My husband said it was the best steak he ever ate. I did not realize I was doing so many thing wrongs when I would make a steak. Great recipe. I will make this again and again. Thanks Chef Anne.
