Blueberry Syrup

  • 1 1/2 cup frozen blueberries
  • 3 tablespoons sugar
  • Juice of half a lemon

Combine berries, sugar and lemon juice in a saucepan and bring to a simmer. Mash some of the berries with a fork to release juices. Serve warm.

I was craving blueberry syrup but had none on hand and with our new fresh snowfall, the store is not where I wanted to be on a Sunday morning. I found this very easy simple syrup to be great. I've tried making others that include orange juice and/or corn syrup before but they were never want I wanted them to be. Will this test like bottled syrup? No. But it's sweet and a good consistency and the lemon does not overpower. It's more of a silent partner. It was easy and I thought it good. item not reviewed by moderator and published
We used this with the blueberry buttermilk pancakes by Cookworks and they were wonderful together. I used fresh blueberries instead of frozen. I don't think it made as much as the recipe said, but you can always make more. It was really quick! item not reviewed by moderator and published
