Ingredients
- One 15-ounce can cannellini beans, drained and rinsed
- 1 packed cup fresh flat-leaf parsley leaves, coarsely chopped
- 1/4 cup extra-virgin olive oil
- 1 tablespoon fresh lemon juice
- 2 teaspoons Madras curry powder
- 1 1/2 teaspoons ground cumin
- 1 teaspoon kosher salt, plus extra for seasoning
- 1/8 teaspoon cayenne pepper
- 1 clove garlic, peeled and halved
- Zest of 1/2 large lemon
- Whole Wheat Pita Chips, recipe follows
Directions
In a food processor, combine the beans, parsley, olive oil, lemon juice, curry powder, cumin, salt, cayenne pepper, garlic and lemon zest. Blend until smooth. Season with salt.
Pour the dip into a serving bowl and serve with Whole Wheat Pita Chips alongside.
- Whole Wheat Pita Chips
- 4 whole wheat pita breads
- 2 tablespoons olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
Preheat the oven to 350 degrees F. Cut each pita bread into 8 wedges. Arrange on a baking sheet and drizzle with the olive oil. Sprinkle with the salt and pepper and bake until crisp and golden, 12 to 15 minutes.

Very easy and fast. I liked the flavor of this dip overall, but I agree with some of the other reviewers who thought it was too salty. I put 1 tsp of kosher salt like the recipe suggested, but found it to be a little too salty. I think next time, I'm going to start with 1/2 tsp salt and add more if necessary. I'm watching the amount of fat intake, so I reduced the amount of oil to 2 tbsp of olive oil and 1 tbsp of canola oil and it came out just fine (canola oil has much less saturated fat than olive oil. If you are serving this to guests, make sure they like parsley! The parsley flavor is pretty strong in this dip. I did not have madras curry powder so I used regular Indian Curry powder and it came out great.

I made this for my 20 something kids and they didn't leave any for me. I'll have to double the recipe next time so that I can hide a bit from them. Love the citrus and the fresh parsley!! I've used Madras Curry Powder in the can before and found it to be super salty. I went to the local Indian grocery and they gave me Madras Curry Powder from India - no salt added. If you aren't lucky enough to have a local Indian grocery, then, Penzeys carries a salt free Hot Curry Powder that you can order online. Stay away from that little silver can with all that salt!! Make this recipe!! Your children will thank you.

love the combination of white beans and the curry, will serve this again at any get together. On the 5th of Jan. on SPA DAY you did a recipe for Avocado-choclate mousse, and I could not wait to get home from the spa to go on line and get the recipe and it iS NOT POSTED on the Spa Day show---why??? could you please post this recipe?
