Ingredients

  • 4 tablespoons olive oil, divided
  • 1 small onion, finely chopped
  • 1 clove garlic, finely chopped
  • 2 teaspoons whole fennel seeds
  • 2 tablespoons whole-grain mustard
  • 2 tablespoons finely chopped fresh sage leaves
  • 1 pound ground pork
  • Salt and freshly ground black pepper

Directions

Heat 2 tablespoons of oil in a medium saute pan or griddle over medium heat. Add the onions and cook until soft. Add the garlic and fennel and cook for 1 minute. Remove from the heat, stir in the mustard and sage, and let cool for 5 minutes. Place the pork in a bowl, add the onion mixture, and gently toss to combine. Season with salt and pepper.

Heat 2 tablespoons of oil in a large nonstick skillet over high heat. Form the sausage mixture into 8 equal size patties. Cook on both sides until golden brown. Reduce the heat, cover, and continue cooking until just cooked through. Serve warm.

    I combined two recipes to creat this "masterpiece". I combined the cooked ingredients (to which I added a little cayanne... pepper) with the ground pork in Bobby's recipe for the sausage. I then covered it with plastic wrap and put it in the refrigerator overnight to let the flavors REALLY blend. The next morning I made a sausage gravy out of it. I topped Tyler's "better butter milk buscuits" with the gravy and a poached egg. Finally, a shot of my version of Emeril's essence and WOW!!!!! ABSOLUT FANTASTISCH!Read more

    I'm really surprised after reading the reviews that I absolutely can't eat these sausages. Every bite of the whole fennel... seeds just turns my stomach. I watched Bobby make this but i'm wondering if it calls for ground fennel instead...i can't remember what he used. I'm sad b/c i had to throw it out :( But Love LOVE LOVE Bobby Flay and will keep making his creations!!!Read more

    We don't eat pork in our house so we used ground turkey instead. It was terrific. Most turkey sausage in the stores have... pork casing. This is a great alternative for non-pork eaters.Read more
