For the burger: Mix together the beef, Worcestershire, pepper, salt and liquid smoke in a bowl. Roll into half-pound patties and grill to the desired temperature.
For the rib candy: Preheat the oven to 350 degrees F.
Mix the brown sugar, honey and barbecue sauce in a bowl and set aside.
Cut all meat off the bones from the ribs, then cut into cubes and add to the sauce. Stir well until all the meat is coated. Spread on a baking sheet and bake for 20 minutes.
Top the patties with the rib candy and a vinegar-based barbecue sauce on buttered buns.
Cook’s Note
For the best rib candy, use smoked racks of ribs.
