We deconstructed the beloved deli classic and turned into a hearty dinner salad. Loaded with traditional Italian ingredients—flavorful meats, cheeses and vinegary pickled vegetables—this quick and easy recipe is the perfect meal for a busy weeknight.
Preheat the oven to 375 degrees F. Toss the hero roll cubes on a rimmed baking sheet with 1 tablespoon olive oil, 1/2 teaspoon Italian seasoning and 1/2 teaspoon pepper until well coated. Bake until golden and very crisp, about 12 minutes. Set aside.
Meanwhile, whisk together the remaining 1/3 cup olive oil and 1/2 teaspoon Italian seasoning, the vinegar and a pinch each of salt and pepper in a medium bowl. Toss the red onion and tomatoes in 2 separate small bowls with 1 tablespoon of the vinaigrette each. Toss the romaine in a bowl with the remaining vinaigrette and season with salt and pepper.
Divide the romaine among serving bowls. Add the croutons, tomatoes, red onion, provolone and meat to the bowls. Serve with pickled and marinated vegetables and top with grated Parmesan.
