Special equipment: an 8-ounce lidded heat-safe container
Put the grits, coconut milk, cherries, pistachios, brown sugar, cardamom and ginger in the container. Secure the lid, and refrigerate up to overnight.
When ready to eat, add 1/2 cup boiling water, stir gently and cover until the grits are tender and creamy and the cherries have plumped up, about 2 minutes. Stir again, and eat warm.
