1 to 2 servings

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 1 large baking potato, baked, peeled, and diced
  • Kosher salt and freshly cracked black pepper
  • In a heavy medium skillet, heat 1 tablespoon olive oil over medium heat. Add onions and saute until softened and caramelized. Remove onions from skillet. Add remaining tablespoon oil to skillet and heat. I made this a few months ago and it was so delicious! I used my food processor to chop my potato and I also added green onions because I like the onion flavor. item not reviewed by moderator and published
I had a left over leek, 1 shallot and two potatoes and was looking for a simple has browns recipe. This was it. My advice, don't rush the onions, you want them to brown, not burn. Cut up the potato in pieces no bigger than 1 inch and put them in cold water to rinse the starch off while the onions are caramelizing. Remove potatoes with a slotted spoon and drain on paper towels before putting them in the pan. This recipe shows the importance of cooking the onions separate from the potatoes and putting them together at the end, for perfection. item not reviewed by moderator and published
