  • 8 ounces good semisweet chocolate chips
  • 1/2 cup heavy cream
  • 1 teaspoon instant coffee granules

Cook the chocolate chips, heavy cream, and instant coffee in the top of a double boiler over simmering water until smooth and warm, stirring occasionally.

This is so easy and delicious it's almost too good to be true! I made some brownies from an inexpensive mix and poured the ganache over them after they had cooled for about 8 minutes. I kept them on the counter for about 20 minutes and then refrigerated. They turned out great; it was like eating something lush and expensive that you's pay a premium for. I used this instead of frosting for my husband's first gluten free birthday cake (he was recently diagnosed with Celiac Disease and can no longer eat gluten for the rest of his life. I don't know if it was the g-free cake mix, or the ganache, or the combo of both, but the b-day cake was absolutely FABULOUS!
