Ingredients
- 1 tablespoon vegetable oil
- 1/2 cup popcorn kernels
- 1 stick butter, melted
- 2 tablespoons Neely's BBQ Seasoning, recipe follows
- 1/4 cup grated Parmesan
- Salt and freshly ground black pepper
Directions
Put a large heavy bottomed pot over medium heat and add 1 tablespoon of vegetable oil or enough to coat the bottom of the pan. Drop a few kernels of corn in the oil to test the heat. When they begin to pop, add the rest of the corn and cover with a tight fitted lid. Shake the pan while the corn pops to keep it from burning.
Add the popcorn to a large bowl and drizzle with butter. Sprinkle with the BBQ Seasoning, and Parmesan. Season with salt and pepper, to taste, and toss thoroughly.
Neely's BBQ Seasoning:
- 1 1/2 cups paprika
- 3/4 cup sugar
- 3 3/4 tablespoons onion powder
Mix all the ingredients together in a small bowl. Can be saved in an airtight container for up to 6 months.

suggestions for making this even better - use Mushroom Popcorn to get big fluffy pieces to catch all that great seasoning (and it looks great too and use clarified butter - it won't make the popcorn mushy.

I think the Neely's seasoning is what brings this recipe home - the combination of the smoky spice of the paprika with the sweetness of the sugar...it's almost like barbecued kettle corn!

We LOVE your show and look forward to it every week. Keep up the fun!
