Ingredients

  • 2 (15-ounce) cans chickpeas, rinsed and drained
  • 1 small red onion finely chopped
  • 1 small red bell pepper, finely chopped
  • A few ribs celery and leafy tops, chopped
  • 1 clove garlic, minced or grated then grinded into a paste with salt
  • 1/2 teaspoon crushed red pepper flakes
  • 2 tablespoons rosemary, finely chopped, a few sprigs
  • 2 tablespoons red wine vinegar
  • 3 tablespoons extra-virgin olive oil
  • Salt and freshly ground black pepper

Directions

Combine chick peas with onions, peppers, celery, garlic, red pepper flakes and rosemary in a medium bowl. Dress salad with vinegar and oil, salt and pepper.

    I love chickpeas and was looking for an easy salad to make that would keep for a couple days to eat for lunch. I make this... salad pretty much as in the recipe minus the red pepper, except I add either one chopped cucumber or replace the celery with cucumber. I also used dill from my spice rack once because I didn't have any fresh rosemary and that was delicious! Another yummy addition is to sprinkle a serving with flax see right before eating!Read more

    I've been making something like this for years, and the variations are endless. I usually add a can of tuna fish, and... suddenly it's dinner. Throw in some spicy oil cured oilves, grape tomatoes, diced avocado, fennel . . . also try it with white beans if you prefer a creamier texture. Substitute tarragon for the rosemary. Last night I used mint and leftover chicken, because I had it, and that worked beautifully. Bottled pimentos are nice if you don't have a bell pepper on hand. Try lemon instead of vinegar.
