Ingredients

  • 1 pound ground veal, pork and beef combination (sometimes called "meatloaf mix")
  • 2 large eggs, beaten lightly
  • 1/4 cup dry bread crumbs, or as needed
  • 1/4 cup freshly grated Locatelli cheese
  • 2 tablespoons minced fresh flat-leaf parsley
  • Salt and red pepper flakes
  • Club soda, as needed

Directions

In a bowl mix together (until just combined) the meat, eggs, bread crumbs, cheese, and parsley. Season with salt and red pepper flakes. Add enough club soda to make a firm but light textured meatball. Form mixture into meatballs about the size of an ice cream scoop. Chill, covered, until ready to add to sauce.

    I made this recipe tonight but I changed a few things:
    1. I added a lot of parsley and italian seasoning directly to the mixture.As well as a lot of garlic
    2.Add 1 small white and 1 small red onion. Instead of the large ones.
    3.Another recommendation is to put the onion, garlic and fresh parsley into a hand blender-blend together and then add to the mixture.
    4.Put the meatballs in a large frying pan-cook until brown in a bit of olive oil and then transfer all to a Pirex type dish.Then cook in oven.
    5.for the sauce: in a separate bowl add one cup of red wine with a lot of tomatoe sauce and mix together. With a spoon put the mixture evenly on the meatballs.
    6. This makes about 30 meatballs

    These meatballs were very good, I have made meatball which were similar but this was a few things that I had not added before and they turned out really good. I will use this recipe from now on.

    Nice ballance of flavors and the soda water is a great tip. If you don't know what a particular ingredient is, please do a google search. If you haven't tried this recipe then don post a review!
