Directions

Grate potato and onion together. Soak in water mixed with lemon juice to keep from browning. Strain well, mix in eggs, flour and salt and pepper. Form into small patties and fry in a hot skillet until golden brown on the outside and cook through.

    These potato pancakes are delicious!! The only thing I would tell people who have never made or never saw someone make them, is to take a cheese cloth or old clean dish towel and drain out the excess amounts of liquid that the potatoes and the onions produce. Squeeze it until it barely drips, then add the eggs, flour, salt, and pepper. That should help with the raw or mushy inside.
