Asparagus Bundles

  • 2 pounds fresh asparagus, ends trimmed
  • 12 slices bacon
  • 1/2 cup light brown sugar
  • 1/2 cup (1 stick) butter
  • 1 tablespoon soy sauce
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon freshly ground pepper

Preheat the oven to 400 degrees F.

Divide the asparagus spears into 12 bundles. Carefully wrap 1 piece of bacon around each bundle, starting about 1/2 inch from the bottom of the tips. Secure the bacon-wrapped spears with a toothpick. Lay the bundles in a low-sided casserole dish.

In a medium saucepan, combine the brown sugar, butter, soy sauce, garlic salt and pepper. Bring the mixture to a boil. Pour the hot sugar mixture over the asparagus bundles. Transfer the dish to the oven and roast until the spears have begun to wilt and the bacon looks fully cooked, about 25 minutes. Remove the toothpicks before serving.

    Can I give it more than 5 stars? This was amazing. I did not want to share. SO GOOD! Change nothing.
    Ok, I'll admit that I have not liked many of Tricia's recipes. This one is an absolute winner. I served these for Easter dinner, and there were none left, and I had to copy the recipe for everyone. I used only 6 asparagus to a bundle, and a half piece of bacon. You do need to stir the sauce and baste during the cooking process. This is an outstanding recipe.
    I watched Trisha cook this on her show! After reading some reviews I tried sticking the bacon in the oven on 350 for 5-7 minutes then wrapping it....OH MY MY!!! Perfect! I have since made this for dinner many times and made it for some friends. Nothing but excellent reviews! I don't think I will ever eat asparagus any other way :)
    Excellent. If all of the bundles do not fit in the same pan double the sauce. I had no problem with the bacon not getting crisp.
    Based upon the reviews I pre-cooked the bacon half-way (it was still soft enough to wrap around the bundles). I made this the day before Easter (I was bringing as a side dish). It was warmed up in the microwave just before serving and came out really great!! I will definitely be making this again.
    If you like your bacon raw and your asparagus overcooked, then this is the recipe for you. I cooked it as suggested and after 25 minutes, the bacon was still raw on the bottom and just barely brown in the top. I turned it over and cooked for another 15 minutes, at which point the bacon still was not fully cooked and the asparagus was overcooked. OH well, write this recipe off.
    This recipe is delicious, especially the sauce. Just like others mentioned the bacon does not crisp up in the oven. So after the 25 minutes in the oven, I took the bundle out of the original pan and put on a foiled line cookie sheet. Then I put aluminum foil on the top and bottom of the bundle on leaving the bacon exposed. Then I put the pan in the broiler to crisp up the bacon. Turning on each side so that every side was nice and crispy. Then I plated the bundle and spoon the sauce from the original pan on the the bundle. My kids who don't like asparagus really liked the dish and they especially praised the sauce.
    If I could give this recipe 6 stars I would. This is now the asparagus go to recipe for all family gatherings. This recipe is requested by all.

    OMG!!! Now I love Trisha for more than her singing. These are the best of the best. I've served these several times now and my wife always begs me to make them again. This dish is so good it would make a tad pole slap a whale.

    These were excellent. I made them for Memorial Day BBQ and prepared ahead (super easy and poured mixture over right before putting them in the oven. A big hit with everyone. Definitely will make again. Thanks Trish - I LOVE your show!
