Ingredients
  • 2 pounds fresh asparagus, ends trimmed
  • 12 slices bacon
  • 1/2 cup light brown sugar
  • 1/2 cup (1 stick) butter
  • 1 tablespoon soy sauce
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon freshly ground pepper
Directions

Preheat the oven to 400 degrees F.

Divide the asparagus spears into 12 bundles. Carefully wrap 1 piece of bacon around each bundle, starting about 1/2 inch from the bottom of the tips. Secure the bacon-wrapped spears with a toothpick. Lay the bundles in a low-sided casserole dish.

In a medium saucepan, combine the brown sugar, butter, soy sauce, garlic salt and pepper. Bring the mixture to a boil. Pour the hot sugar mixture over the asparagus bundles. Transfer the dish to the oven and roast until the spears have begun to wilt and the bacon looks fully cooked, about 25 minutes. Remove the toothpicks before serving.

Ok, I'll admit that I have not liked many of Tricia's recipes. This one is an absolute winner. I served these for Easter dinner, and there were none left, and I had to copy the recipe for everyone. I used only 6 asparagus to a bundle, and a half piece of bacon. You do need to stir the sauce and baste during the cooking process. I watched Trisha cook this on her show! After reading some reviews I tried sticking the bacon in the oven on 350 for 5-7 minutes then wrapping it....OH MY MY!!! Perfect! Based upon the reviews I pre-cooked the bacon half-way (it was still soft enough to wrap around the bundles). I made this the day before Easter (I was bringing as a side dish). If you like your bacon raw and your asparagus overcooked, then this is the recipe for you. I cooked it as suggested and after 25 minutes, the bacon was still raw on the bottom and just barely brown in the top. I turned it over and cooked for another 15 minutes, at which point the bacon still was not fully cooked and the asparagus was overcooked. This recipe is delicious, especially the sauce. Just like others mentioned the bacon does not crisp up in the oven. So after the 25 minutes in the oven, I took the bundle out of the original pan and put on a foiled line cookie sheet. Then I put aluminum foil on the top and bottom of the bundle on leaving the bacon exposed. Then I put the pan in the broiler to crisp up the bacon. Turning on each side so that every side was nice and crispy. Then I plated the bundle and spoon the sauce from the original pan on the the bundle. The asparagus bundles were excellent. I tried par-cooking the bacon as some suggested to cut down on the grease. Next time I make this I will have to cook the bacon a little less since they weren't easy to wrap around the asparagus once the bacon firmed up. I also over-cooked the butter/brown sugar mixture--mine was thick and syrupy. Even so, the flavors were wonderful. I used center cut bacon to try and get the meatest bacon but it still was not crispy. Amazing flavor of sweet asparagus and the bacon was good even though not crispy. I did spread the bacon out in a single layer over the asparagus so it could cook evenly. I made the recipe as directed and thought it turned out great. It presents very well. However, I think I would make this differently next time. I think I would prefer to eliminate most of the bacon fat by cooking the bacon separately as another reviewer suggested. The brown sugar butter sauce is delicious. I think I would use it to baste the asparagus while it's roasting on a cookie sheet and then serve some warm sauce with the asparagus, sprinkled with crispy bacon and then toss it all quickly in the warm sauce. Love this recipe but in an effort to be just a little bit different it's also tasty in a deconstructed form of prepping the asparagus, then laying in a single layer in a cooking spray coated casserole dish. Pour the the same sauce mixture over and roast in the oven as directed. While the asparagus is cooking, cook 6 to 8 slices of bacon til crisp in the microwave and set aside. Crumble and top the cooked asparagus just before serving. If you want to be really fancy you can also add some fine chopped almonds or toasted walnuts for extra crunch. Ok. I confess this may be user error. The ends game out shriveled and the part underneath the bacon was mushy. My mother in-law was running late for Christmas eve so I did keep them on low in the oven to stay warm. My warning would be that if you try this make sure that the cooking time is perfect. Made these today as trial run for Xmas. I am not a great fan of asparagus but WOW, these are so good. Crazy easy to make ahead and pop in oven right before dinner. I followed advice of other reviewers and saved some of the sauce to baste again right before serving. I made this at my daughter's for Thanksgiving and everybody loved it. It was a huge hit. I wasn't a big asparagus fan, but I must say this has changed my mind. I made these for Thanksgiving dinner tonight and they were delicious! I made them exactly as directed, except I put them on a wire rack and then on a cookie sheet. That allowed the bacon fat to drip off on to the cookie sheet while the bacon crisped up nicely. I reserved some of the butter/brown sugar mixture to brush on after I pulled the bundles out of the oven. Everybody loved them. I'm definitely going to make them again for Christmas dinner.
