Praline Bacon

Ingredients

1 pound thick cut bacon

2 1/2 ounces light brown sugar, about 6 tablespoons

1 1/2 ounces pecan halves

Directions

  1. Heat the oven to 400 degrees F.
  2. Line a half sheet pan with aluminum foil. Arrange the bacon in a single layer on a cooling rack, and set it in the prepared sheet pan. Bake until the bacon browns and the fat is rendered and bubbly. About 30 to 35 minutes.
  3. Meanwhile, combine the brown sugar and pecans in a small food processor. Pulse about 15 times or until the pecans are finely chopped.
  4. Remove the bacon from the oven, sprinkle with the brown sugar mixture, and pat down to adhere. Return to the oven a bake until the bacon is crisp, about 10 minutes.
  5. Cool on the rack for 10 minutes before serving.

I followed the instructions, but it turned out that even 30 minutes was too long a wait -- it got over-done by then. Next time, I'll have to add the powder 20 minutes in. Following the recipe, the bacon got black-burnt at the ends and set off the fire alarm. I also should have coated more of the powder on the bacon. Still, my wife liked the experimental results, so it's worth it to try a few more iterations and get the timing worked out for my oven. And yes, I made sure to use a liquid oven thermometer to make sure my oven wasn't lying to me.
