Arroz a la Jardinera

Ingredients

2 cups long grain rice

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, chopped

1/2 pound green peas

3 carrots, peeled and finely chopped

1/2 pound string beans, cut into small pieces

2 cups boiling water

Directions

  1. Place the rice in a large bowl and rinse under cold running water for 5 minutes. Drain and set aside.
  2. Heat the oil in a medium heavy saucepan over medium low heat. Add the onion and saute until soft, but not brown, about 5 minutes. Add the garlic and saute for 1 more minute to release the aromas. Add the peas, carrots and string beans, and cook slightly, about 2 minutes. Add boiling water and rice, cover tightly and simmer for 1520 minutes, or until liquid is absorbed and rice is tender. Stir with a fork and serve hot.

This recipe does not include salt. rinsing the rice takes away added nutrients. You may enhance the flavor by adding peppers,cilantro and chicken or beef broth. to make things easier...use frozen mixed vegetables
