This sweet, tangy and crunchy health salad (aka "vitamin salad", or "Claremont salad" — named for the famed Claremont deli in Verona, NJ), is named as such because it lacks creamy mayonnaise or sour cream commonly found in most Russian and Eastern European salads, creating a lighter, slaw-like dish. The crunchy staple is beloved in New York City Jewish delis, and makes a perfect appetizer for Hanukkah.

Ingredients

1/2 small head red cabbage, shredded

1/2 small head green cabbage, shredded

1 large carrot, grated

2 Persian cucumbers, thinly sliced

3 to 4 radishes, thinly sliced

1/2 red bell pepper, thinly sliced

1/2 green bell pepper, thinly sliced

1/2 small sweet onion, such as Vidalia, thinly sliced

6 tablespoons vegetable or avocado oil

6 tablespoons apple cider vinegar

3 tablespoons sugar

Kosher salt and freshly ground pepper

Directions

  1. Combine the red and green cabbage, carrot, cucumbers, radishes, red and green bell peppers and onion in a large bowl. Add the vegetable oil, vinegar, sugar and 3/4 teaspoon each salt and pepper. Toss well to coat.
  2. Cover the salad and refrigerate at least 2 hours or overnight.
