Ingredients
1/2 small head red cabbage, shredded
1/2 small head green cabbage, shredded
1 large carrot, grated
2 Persian cucumbers, thinly sliced
3 to 4 radishes, thinly sliced
1/2 red bell pepper, thinly sliced
1/2 green bell pepper, thinly sliced
1/2 small sweet onion, such as Vidalia, thinly sliced
6 tablespoons vegetable or avocado oil
6 tablespoons apple cider vinegar
3 tablespoons sugar
Kosher salt and freshly ground pepper
Directions
- Combine the red and green cabbage, carrot, cucumbers, radishes, red and green bell peppers and onion in a large bowl. Add the vegetable oil, vinegar, sugar and 3/4 teaspoon each salt and pepper. Toss well to coat.
- Cover the salad and refrigerate at least 2 hours or overnight.
