Ginger-Spiced Buttered Rum Cocktail

Ingredients

3/4 cup dark brown sugar

1 stick (8 tablespoons) unsalted butter 

3 tablespoons maple syrup 

1 teaspoon ground ginger 

1/8 teaspoon ground allspice 

2 cups boiling water 

6 ounces dark rum, such as Myers's

4 slices fresh ginger 

Directions

  1. In a medium bowl, use a wooden spoon to combine the sugar, butter, maple syrup, ground ginger and allspice. Mix until well combined.
  2. Transfer the mixture to a pitcher. Add the boiling water and rum. Divide the fresh ginger among 4 mugs or coffee cups and portion the cocktail. Serve hot.

OMGZ! My husband and I watched today and he thought he wouldn't mind paying bills if I made this Hot Buttered Rum for us. It was the very best either of us have ever had. The butter was luscious, and the ginger and allspice added such a piquant touch to an old favorite. The slice of ginger was a delightful addition, giving it's fragrance to the last drop.
