Chocolate Ganache

8 ounces good semisweet chocolate chips

1/2 cup heavy cream

1 teaspoon instant coffee granules


  1. Cook the chocolate chips, heavy cream, and instant coffee in the top of a double boiler over simmering water until smooth and warm, stirring occasionally.

Oh, this is great!  Used pantry and refrigerator items I had on hand.  Fat free half and half and dark chocolate morsels.  No Instant Coffee so I used a pinch or two of cayenne pepper.  I did add a teaspoon of sugar to smooth out the harshness of the dark chocolate.  Perfect.  I know this isn't the actual recipe Ina provided, but it was a great base for what I had.
