Canned Chickpea Pizza Crust

Ingredients

Nonstick cooking spray, for the baking sheet

One 15-ounce can chickpeas, rinsed, drained and dried (I put them in a dishtowel and shake until dried) 

1 tablespoon gluten-free flour 

1 teaspoon garlic powder 

1 teaspoon Italian seasoning 

1 teaspoon onion powder 

1 teaspoon kosher salt 

1 large egg 

Freshly ground black pepper

Desired pizza toppings

Directions

  1. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper and spray with nonstick cooking spray.
  2. Combine chickpeas, flour, garlic powder, Italian seasoning, onion powder, salt, egg and some pepper in a food processor until smooth. (The mixture will be creamy, like hummus.) Transfer to prepared baking sheet and spread into a 10-inch circle with a rubber spatula.
  3. Bake 15 minutes. Remove from oven and add desired toppings. Return to oven and bake an additional 10 minutes. Slice and serve.

The crust does fall apart and even with adding extra seasoning it’s a NO.
