Ingredients

1/2 cup loosely packed fresh basil leaves

1/4 cup loosely packed fresh parsley leaves 

4 scallions, green parts only, coarsely chopped 

1/4 cup finely grated Parmesan

2 oil-packed anchovy fillets, drained 

1/2 cup mayonnaise 

Freshly ground black pepper 

Directions

  1. In a food processor, pulse the basil, parsley and scallions until finely chopped. Add the cheese and anchovies and process to a paste consistency. Add the mayonnaise and puree until smooth. Season with pepper.

So delicious on corn and on yellow squash after grilling. I'm thinking this will be good on a tomato sandwich also!
