Jalapeno-Avocado Cashew Cream

Ingredients

3 cups raw cashews

2 ripe avocados

1 cup packed fresh cilantro leaves 

2 tablespoons olive oil 

1 jalapeno, stemmed, seeded and deveined 

Zest and juice of 1 lime 

Kosher salt and freshly ground black pepper

Directions

  1. Put the cashews in a bowl and cover completely with water. Soak for about 3 hours and up to overnight.
  2. Drain the cashews, reserving the soaking water, and transfer the nuts to a blender or food processor. Blend until smooth and silky, about 2 minutes.
  3. Scoop the avocado flesh into the blender with the cashews and add the cilantro, olive oil, jalapeno and lime zest and juice and blend until smooth. The mixture should be about the consistency of pancake batter--slightly thick, but pourable. If the mixture is too thick, add some of the reserved water from soaking the cashews. Season with salt and pepper.

This dressing was very yummy, but the recipe made way too much. Raw cashews are neither cheap nor easy to find, at least where I live, so I had to special order them. I used even less than the recipe called for and still had this dish for days.  I agree with Ann M. that this could totally be a hummus. I also tried it that way in order to eat as much as I could, but finally had to toss it because its shelf life isn't long. I also agree that it was very bland, despite the jalapenos, so yes, you must season to taste. All in all, there are better dressings to make, or at least make less!
