Pineapple Salsa

Ingredients

2 cups small-diced pineapple

1 cup small-diced strawberries

1 cup small-diced kiwi (about 3 kiwis)

1 lime, juiced 

1/2 jalapeno, seeded and minced 

2 tablespoons thinly sliced mint (in thin ribbons)

Kosher salt 

Cinnamon-sugar pita chips, for serving 

Directions

  1. In a medium bowl, toss the pineapple, strawberries and kiwi with the lime juice and jalapenos. Gently fold in the mint. Add salt to taste.
  2. Serve with cinnamon-sugar pita chips.
