Betty's Lemon Vodka

This recipe is in honor of my good friend, Betty White. Her favorite cocktail was vodka on the rocks with lots of lemon, and I know she would just love this. The vodka is infused with lemons and has such a nice smooth flavor. Mix it into cocktails, or enjoy it the way Betty would, over ice with a twist.

Ingredients

Infused Vodka:

One 750-milliliter bottle vodka

2 lemons, sliced

Lemon Rimming Sugar:

1/4 cup granulated sugar

1 teaspoon lemon zest plus lemon wedges, for serving

Directions

  1. For the infused vodka: Add the vodka and lemons to a large glass jar. Close the lid and shake. Refrigerate for 7 days, shaking the jar every few days to help the infusion.
  2. Remove and discard the lemon slices, then strain the vodka, if desired. Store the lemon vodka in an airtight container in the fridge or freezer.
  3. To make a cocktail, mix the sugar and lemon zest together in a shallow dish. Rim the glass with a lemon wedge, then dip in the lemon sugar. Add ice to the glass and top with the lemon vodka.

And now we all know WHY Betty was so happy!!! Vodka/rocks w/twist is my go to, so the infused vodka really sounded great AND IT WAS! Don't like too much sweetness so rimmed with zest and very little sugar. Yum yum yum! Long live Betty!
