Chef-Partner Chung Chow opened this modern Hawaiian restaurant with two other Per Se veterans (Gerald San Jose and Jin Ahn) in early 2015. There, the Hawaii native offers a current perspective on the cuisine from his homeland, including melting pot influences from its Polynesian, Japanese, Korean, Filipino and Chinese residents. The chef imparts the dishes at this casual East Village restaurant with French technique and New York City style.
