He’s particularly fond of the Tortellini en Brodo, a golden soup brimming with delicate dumplings. These bite-sized tortellini come stuffed with a luscious pork filling. This rich porcine flavor extends to the chicken broth, which includes prosciutto trimmings and Parmigiano-Reggiano rinds. “For me, the broth is quintessentially the expression of the dish. It could easily be every grandma’s favorite soup,” says Batali. He also favors the Gramigna con Salsiccia, a traditional pasta dish composed of al dente noodles smothered in a pork-studded sauce.
