There is a long history of fishing in and around Lake Champlain. In winter, small ice-fishing huts sprout on its surface. Since 1951, family-owned Ray’s Seafood has bought buckets of yellow perch and other lake fish from local anglers. At the family's Essex Junction location, they serve the haul as excellent fried perch fillets in a light, crunchy batter.
