For the homemade apple compote: Put a saucepan on medium to high heat. Add the apples, then the orange juice, brown sugar, vanilla, cinnamon and salt. Cook until the sauce is thickened and the apples are tender. (Taste as you go; may want to add more sugar or juice.)
For the pancake bites: Whisk together the flour, buttermilk, granulated sugar, baking powder, vanilla and eggs in a bowl. The mixture should be on thick side. If it is too loose, add more flour.
Heat a pot with the oil to 350 degrees F.
Use a spoon to make balls out of the mixture and drop them slowly into the pot. Cook until cooked through, 5 to 8 minutes.
Top the apple compote with the pancake bites and enjoy!
