Ingredients

  • 4 ears of corn
  • 2 tablespoons olive oil
  • Salt
  • 3 tablespoons unsalted butter
  • Juice of 1 lime
  • 1 tablespoon coarsely cracked black pepper

Directions

Brush corn with olive oil, season with salt, place on the grill and grill until lightly golden on all sides. Heat the butter in a medium skillet and add the lime juice. Add the corn niblets and cook for one minute. Add the black pepper.

    I think there is a step missing--cutting the niblets off the grilled ears? I assume that you cut them off after grilling?

    This recipe makes corn from "Good," into "Wow!" We made a double batch for a BBQ party, and ran out too quickly. A great alternative to plain corn on the cob.
