Tomato Soup with Baby Grilled Cheese Sandwiches

Ingredients
  • 2 tablespoons unsalted butter
  • 3 ounces prosciutto finely chopped
  • 3/4 cup chopped yellow onions
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrots
  • 3/4 teaspoon minced garlic
  • 1 bay leaf
  • 1/2 cup tomato paste
  • 2 tablespoons all-purpose flour
  • 2 cups chopped, peeled, seeded tomatoes
  • 3 cups chicken stock or vegetable stock
  • 1/3 cup heavy cream
  • Salt and freshly ground pepper
  • 2 tablespoons sugar
  • 2 tablespoons apple cider vinegar
  • Baby Grilled Cheese Sandwiches, recipe follows, accompaniment
  • Chopped chives and parsley, for garnish
  • 4 to 5 whole tortillas, fried and chopped, for garnish
Directions

In a large saucepan, melt the butter over medium-high heat. Add the prosciutto, onions, celery, carrots, garlic, and bay leaf and cook, stirring, until the onions are soft and fragrant, about 3 minutes. Add the tomato paste and cook, stirring, for 2 minutes. Stir in the flour, and cook, stirring, for 1 minute. Add the tomatoes and stir well. Add the stock and bring to a boil. Reduce the heat and simmer, stirring occasionally, for 20 minutes. Add the cream and cook for 3 minutes.

Remove from the heat and discard the bay leaf.

If you like a smooth soup you may use a hand-held immersion blender, or in batches in a food processor, puree the soup. Season, to taste, with salt and pepper.

In a small saucepan, caramelize the sugar over low heat. Add the vinegar and stir to dissolve the sugar. Add to the soup a teaspoon at a time to balance the acidity.

To serve, ladle the soup into bowls and arrange the sliced sandwiches around the sides. Garnish with the herbs and chopped tortillas and serve.

Baby Grilled Cheese Sandwiches:

3 tablespoons cream cheese, at room temperature

3 tablespoons mascarpone cheese

1 teaspoon minced chives

Pinch salt

4 tablespoons unsalted butter

8 thin slices brioche, or homemade style bread, crusts removed

In a small bowl, blend together the cream cheese, mascarpone, chives, and salt. Spread the mixture on 4 slices of the bread and top with the remaining bread. Spread 1 1/2 teaspoons of the butter on each side of each sandwich.

Heat a griddle or large skillet over medium-high heat. Add 2 sandwiches and cook until golden brown, 1 1/2 to 2 minutes per side. Remove and repeat with the remaining sandwiches. Cut each sandwich into 2 triangles. Serve immediately.

    My honey tells me this is the best tomato soup he's ever had! I agree. It was so delicious, I made it twice in one week. Used the leftover grilled cheese spread on crackers as a snack. Seriously, yummy.
    This soup is amazing!!!!! The ingredients are perfectly balanced giving it a round full flavor in your mouth. LOVE ITTTTTTTTTTTTTTTTTTT
    Everybody in my family loved this soup even my 8 month old baby and my 3 year old daughter asked for more. it is very easy to make.
    I am not a cook. I hate cooking, but I have to every Thursday. This recipe is so easy and it is delicious! The Grilled Cheese Sandwich is a little different. My advice is DON'T use dried chives (I did and yuck!). It is so worth it to buy fresh chives!

    Very tasty but too rich to eat with a sandwich.Neither my boyfriend or I could eat much. I may make it again but serve just a small amount.
    Haven't made the soup yet, but the grilled cheese sandwiches are made a few times a month at my house. Everyone loves them. They are simple to make and have such a smooth flavor. Most people usually want a second one they taste so good. You can also use the filling on bagels for breakfast. Sooooo good.
    This is simply delicious. My boyfriend said it tasted like ravioli... and wanted me ti add ground beef next time (of course, I rejected the idea, since it is supposed to be tomato soup... not ravioli soup) haha. but anyways.
     
    The house smelled wonderful while I was cooking. There are a lot of veggies, and it is creamy at the same time. I did not have to add much of the sugar-vinegar mixture. I ended up with a very good soup, with a lot of flavor, and very healthy. Grilled cheese is good, nothing amazing though!
    This soup is so good. I add all different types of meat & seafood to it. I have looked a long time for a good tomato soup and this is it.

    This soup was so awesome! My husband and daughter BOTH loved it! I must admit they both enjoy my cooking but my daughter is 9 years old and has started becoming picky about certain things so when I can get healthy food into her skinny, little body I feel so good! This is one GREAT dish! Emeril's dishes are complicated. I usually don't attempt them because they involve too many ingredients- sometimes with some I can't get- but this one is "do-able." You can make a big pot and freeze.
    This is an excellent recipe. It was easy, quick and delish. My husband is a lover of tomato soup and had asked me to find a recipe to make for him. The soup was fantastic and the cheese sandwich is such a good compliment in this recipe. I did not have fresh tomatoes, so I used canned tomatoes instead. I also did not have mascarpone cheese so I just used the reduced fat cream cheese. I used my hand held blender to puree the soup smooth, then garnished with chopped chives. My husband who thinks it is a sin to 'dunk' anything, was dunking the sandwich into the soup and smiling like a cat who ate the canary! He commented several times thru dinner how wonderful the recipe was. That said it all. This is a keeper recipe. Thank you Emeril, for a great recipe.

    This was one of the best soups I have ever had. It is so easy to make too.
    Now, keep in mind that I like tomato soup. I even like plain tomato soup out of a can once in a while. When I saw Emeril making this soup on TV, I downloaded the recipe. I made it for the first time tonight (along with the baby grilled cheese), and it was excellent! My roommate, who doesn't like tomato soup at all, went crazy for this recipe! This is going to be the first thing I cook for my girlfriend when I move in with her in a month (after cooking it 3 or 4 more times myself...just to make sure I have it down right). :> Incredible!
